Mexican minced meat and bean chilli. Can be prepared very quickly. We were afraid that beans will blanket out other ingredients, but we were wrong and I am glad about that. We wanted something hot, and we got it 🙂

Chili con carne

Time needed:
Yields: 4 servings
Calories: 489 kcal / serving

Ingredients:

  • 500 g meat, minced
  • 2 onions
  • 2 tbsps. oil
  • 2-3 cloves garlic
  • 1 can (400 g) chopped tomatoes
  • 1-1,5 tbsps. dried chilli pepper or 1-2 hot chilli peppers
  • 1 tsp. oregano
  • 2 cans (400 g each) white beans in tomato sauce
  • 1 red bell pepper
  • 1 green bell pepper
  • salt

Directions:

  • Heat the pan with oil and braise onions with minced meat (if you use fresh chilli peppers, braise them chopped too).
  • Pour tomatoes, seasonings and braise a few minutes.
  • The mix in beans, cut bell peppers, salt to taste and braise 10 minutes more.
  • Serve with rice or French bread.
  • Enjoy!

It’s a perfect lunch in an office! For preparation you can use yesterdays meatballs, and in this case you will use less time for making this pie. I give you here a little bit changed crust amounts, because I like when the crust is thinner.

This pie may look strange at first, but we tried it twice and we liked it. Apples gives sweet and Tabasco – spicy tastes. And this pie doesn’t require eggs, so the filling is not so solid but it’s not crumbly also. I and my son liked the pie crust – it’s with whole wheat flour, so it crumbles a little bit more than usual with only white wheat flour, but it has some charm in it.

Cinnamon always associates with Christmas. So when autumn comes, we all tend to bake apple pies which almost every time are seasoned with cinnamon. But this spice is used not only for sweets. With it you can really prepare very tasty and also healthy dishes. One of them – chicken with cinnamon and paprika. And even if you are not used to cinnamon in non sweet meals, I can say that in here it gives only a very mild aroma and a good pinch of bitterness and cosiness. And paprika has a lot of vitamin C, so it’s really good if you don’t want to get cold.

Once I made these salads and it was something new. Maybe it tasted not so usual to us, but it was really good. And now I made these salads for four times and they still disappear very quickly. So I save the recipe here and recommend to try them you too.

It’s almost summer so we could wait anymore for fresh vegetables from our own garden and started to by tomatoes, cucumbers and salads. Now we can eat salads for lunch and dinner. But I’m looking carefully to the future and seeking new ideas for great refreshing food. One of the findings is this salads. It looks very simple, but all ingredients are balanced and suits each other. And for the best it is so quickly prepared that you can make it for lunch – just chop vegetables in the morning and by some curd before going to the office. 😉
