Apple butter cookies with rasins

These cookies are universal 🙂 I baked them several times. And one time, when I found out that we don’t have nor apple butter, nor raisins, nor nuts, I improvised and cookies we make with plum jam and poppy seeds. They turned out grate too 🙂 So I decided that these cookies are perfect when I have some jam leftovers. By the way, I used unsweetened apple jam, so if you use sweet one, then I suggest to add 50 ml less sugar.

Apple butter cookies with rasins

Time needed:
Yields: 30 cookies
Calories: 128 kcal / cookie

Ingredients:

  • 100 g butter
  • 200 ml sugar
  • 250 ml apple butter
  • 1 egg
  • 500 ml wheat four
  • 250 ml oats
  • 1/2 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 1/4 tsp. salt
  • 150 ml raisins
  • 100 ml chopped nuts (optional)

Directions:

  • Beat room temperature butter with sugar.
  • Add apple butter, egg, cinnamon, salt and mix till solid mixture.
  • Mix in flour, oats, baking powder and baking soda.
  • Add nuts, raisins and mix one more time.
  • Using two teaspoons add cookies on a baking tray lined with baking paper.
  • Bake in preheated to 200°C oven about 15 minutes, or till cookies will be golden brown.
  • Enjoy!

It’s super easy but super good! I couldn”t imagine that I will like it so much. Before I tried this dough, dumplings at my house was really a guest. But now I prepare them with meat, curd or other chosen filling. My family likes it. I saw that Skanus gyvenimas prepared very similar dumpling dough but with eggs. I didn”t tried it yet, but sure it should taste even more better. But anyway, the recipe below gives very plastic, not sticking, unshrinkable dough. It”s a little bit like plasteline 🙂 And I just love it.

Refreshing coffee-cake with light cherry sourness. At the beginning I was afraid that the recipe uses too much cherries, but when we tasted this coffee-cake we understood that the balance of sweetness and sourness is just perfect.

This gingerbread cookies I baked two times and the second time I made them thinner – these were much more better 😉 It’s sad that ducks, elephants, mice and butterflies didn’t survived till photo session.. By the way, I don’t know why but butterflies were most popular 🙂 Maybe because they were very colourful… This is the last entry about Christmas baking. So what now? Will be waiting for the spring? 🙂
