We just love tortillas. I tried this recipe more than once. Every time disappears very quickly, because my kids and me just eat them warm plain. My hubby doesn’t adore pastry, but he enjoys eating tortillas with some filling. So I really recommend to try – it’s simple, quick and better one hundred time than store bought.

Tortilla

Time needed:
Yields: 12 units 15 cm diameter tortillas
Calories: 114 kcal / tortilla

Ingredients:
1 cup = 237 ml

  • 2 1/4 cups flour
  • 2 tsps. baking powder
  • 1 tsp. salt
  • 2 tbsps. oil
  • 3/4 cup milk

Directions:

  • Heat milk in microwave or on stove till boiling.
  • Mix all dry ingredients in mixer bowl. Pour oil.
  • Let mix a little bit and slowly pour hot milk. Mix till the dough will not stick to the sides of bowl, about 3-4 minutes.
  • Sprinkle some flour on clean surface, take the dough out of mixer bowl and kneat a little bit with hands. Devide dough to 12 parts (I devide to 8 parts because my pan is 26cm diameter).
  • Roll out the dough to 15 cm diameter circles.
  • Bake tortillas in a hot pan for 30 seconds from both sides, or till the tortilla will brown nicely.

Basic Biscotti

I have not one biscotti recipe, but for the first time I decided to bake the simplest kind – basic. I was afraid that simple ones look like rusk, so I decorated them with dark and white chocolate. At the office, we laugh that I brought them rusks but anyway biscotti disappeared quickly. And for afternoon tea/coffee there were only a few biscotti left.

Tomorrow is Mardi Gras, and it seems, if I had no kids, I could forget it. But not now, because my kids already said what pancakes I should bake for their school. And as always my mind is busy about ideas what I could make tasty to feed my family. These crepes takes it all – they are very delicious and very satisfying. And everything in preparation is very simple and clear. But every time I prepare them, all just start to fight for them. For me, it gives a lot of pleasure. Since it is very tasty, it is difficult to stop eating them, so I make them not very often but during Mardi Gras you really can treat yourself.

One day I had a strong feeling that I just have to bake something for my co-workers. So I told my hubby that he has to look after our children till they get asleep and went to the kitchen. We tasted this coffee cake the next day. And it tasted very good, so until lunch the coffee cake was gone.

I don’t know why but I look at baking with dried fruits suspiciously. But now I’m ashamed… I baked these muffins and ate half of them all by my self… Sour milk gave the taste of cottage cheese. Strange, but we like it 🙂
