Banana zucchini muffins

Banana makes these muffins smell very nice and zuchhini gives moisture. The good thing that you can use freezed grated zucchini (just squeeze the juice very good).

Banana zucchini muffins

Time needed:
Yields: 12 muffins
Calories: 210 kcal / muffin

Ingredients:
1 cup = 237 ml

  • 1/3 cup oil
  • 1/2 cup sugar (I used 100 ml)
  • 2 eggs
  • 1 3/4 cup all-purpose flour
  • 1 1/2 tsp. baking powder
  • pinch salt
  • 2 ripe bananas, mashed
  • 1 cup zucchini, grated
  • 1/2 cup walnuts, chopped (optional)

Directions:

  • Preheat oven to 180°C.
  • Cream together oil and sugar.
  • Add eggs and banana, beat well.
  • Sift together dry ingredients, add to creamed mixture.
  • Add zucchini and stir well. Stir in nuts.
  • Pour batter into muffin pan.
  • Bake for 30-35 minutes.
  • Let cool on wire rack.
  • Enjoy!

Challah

I baked this challah a lot of times, because I just love it. The last time I baked it I prepared the dough and to rise the first time I put it in a fridge for the night. The next morning I took it out, formed challah and let rise it the second time, then baked it. So that morning we had delicious breakfast with still warm challah.

Swirl Pumpkin Brownies

Yes, I still have pumpkin puree 🙂 And this time it’s not so healthy but very chocolate brownie. It’s really easy, just I baked 10 minutes more. The next time, I will bake only 5 minutes more. And also, when I baked it second time I used less sugar, and my big girl tasted that. My hubby also agreed that brownie second time was not so good as the first time. So the third time I won’t change anything – these proportions are really perfect!

Pizza waffles

When today children heard that will be these waffles for lunch, impatiently waited until they baked and of course waffles disappeared quickly. Daughter even after a dance session ate all leftovers. She literally licked the plate clean (I had to look carefully into the plate to understand that it was not washed out :)). But don’t think that some wild people live down here in our house, I have to mention that she licked the sauce with waffle, not with the tongue 🙂

One more way to make your kids happy. Preparation takes time because you have to chill the dough long. But the cookies are delicious and we liked it, out kids kindergarden liked them too 🙂

Creamy rhubarb pie

This pie I caked in the beginning of this summer, but still in supermarket I saw rhubarbs, so maybe you still have some at home too. This pie is not very sweet. Next time I think I’ll double sugar in the filling or use less rhubarbs. But anyway, when this pie was cold kids and adults enjoyed it a lot!
