This weekend we expected some guests, so I knew that my parents will prepare food more than we can eat. But despite this for the Lithuanian national festival I wanted to prepare something light but sweet. In the beginning of the week I saw this recipe in a book, and decided that it will be perfect for today. By the way – fruit salsa colours make Lithuanian flag.

Dessert came out really good. Someone put fruit salsa on cinnamon chips, someone ate fruit salsa with teaspoon next to the cinnamon chips. Kids ate all leftovers and looked for more cinnamon chips, but unfortunately… they were all gone.

By the way, long time before I made salty lavash chips, so this version of chips will be perfect for kids festivals.

Cinnamon chips with fruit salsa

Time needed:
Yields: 6 servings
Calories: 209 kcal / serving

Ingredients:
1 cup = 237 ml

  • Cinnamon chips:
  • 3 round lavash (about 30cm diameter)
  • 40 g butter Lurpak
  • 2 tbsps. sugar
  • 1,5 tsp. cinnamon
  • Fruit salsa:
  • 1,5 cup strawberries
  • 0,5 big apple
  • 2 kiwi
  • 1 tbsp. lemon juice
  • 1 tbsp. golden syrup or honey, or other sweetener

Directions:

  • Melt butter in a bowl.
  • Spread butter on lavash sheets.
  • Sprinkle sugar and cinnamon mixture over lavash and cut it in desired size chips.
  • Bake chips in a preheated to 175°C oven about 5 minutes.
  • For the fruit salsa, cut apple in cubes and mix with lemon juice.
  • Then chop a little bit strawberries and cut kiwis in cubes.
  • In a bowl carefully mix all fruit salsa ingredients.
  • Transfer fruit salsa in a small bowl. Put it in a middle of a serving plate. Lay cinnamon chips around fruit salsa.
  • Enjoy!

When I was a child, my mom used to bake very similar cake to this one, she never added any fats to it. But this cake is more beautiful to me because it has apple layer. It’s very quick and simple, and author says it’s skinny – so why not to give it a try 🙂 Anyway, I think that there is no bad food, it’s all in quantities that we eat 🙂

This recipe waited for a year because last year somehow I was late – apples were gone, and I didn’t want to buy them. So this year this is my first (and the only) apple cake. And it was a really good cake! I baked only half of the recipe, but I got only one slice – my kids ate almost half of it at once. I could treat my parents only with the small slices… The cake is very moist and in reality it looks better than in the book. And I won’t judge my photos 🙂

This year I can say that we don’t have own apples. So when I got a bag of apples I wanted to try something new. And these muffins are different because apples aren’t mixed in the dough, they’re on top. They look nice and taste good.

Strawberry and rhubarb cake

It’s very bad when you don’t write the recipe in the blog after you eat the cake 🙂 Then you have to look for the recipe for a few days. I baked this cake when we were going to the village and strawberries were still in the season. It had to be all strawberry, but I had no time so I use rhubarbs as they were near me. Rhubarb and strawberry combination isn’t new – it fits perfectly. And the texture of the cake is more like sponge than a teacake. I liked it very much.
