I wanted something new, not usual to us. So I prepared this chicken and I’m happy about that. At first the process looked very difficult and long, but in one hour everything was finished and we could enjoy the meal.

Chicken breast coated with polenta

Time needed:
Yields: 4 servings
Calories: 300 kcal / serving

Ingredients:

  • 300 ml chicken stock
  • 75 ml polenta
  • 2-3 sun dried tomatoes in oil
  • 4 sprays basil
  • salt
  • pepper
  • 1 leek
  • 1 tbsp. oil
  • 2 chicken breasts
  • 1 clove garlic
  • 100-200 ml grated cheese

Directions:

  • In a pot boil chicken stock.
  • Pour polenta and mixing boil for about 6-7 minutes on a low heat.
  • Chop tomatoes and basil. Mix them with polenta, season with salt and peppers.
  • Trim and cut in stripes the leek.
  • Sauté in a pan with half of oil.
  • Put leek in baking dish.
  • In another half of oil fry chicken breasts for 3 minutes from both sides.
  • Season with salt, peppers and crushed garlic.
  • Put chicken breasts on the leek.
  • Put over the chicken polenta and sprinkle with cheese.
  • Bake in 225°C preheated oven about 15 minutes.
  • Serve with salads.
  • Enjoy!

This weekend my kids were just amazing. They made these hot sandwiches alone, without my help. They even concurred their fear of the oven and the heat. The first day actually I helped them with the oven a little bit, but the next morning – me and my hubby had breakfast in bed, because my kids did everything on their one! Our eyes were wide open out of the pride what grate kids we are have. I love my kids!

Baked chicken livers with onion and tomato sauce

From the childhood we all know that livers are very healthy to eat, but knowing doesn’t mean that you do it. One day I decided to make chicken liver pate and they were very delicious but I had some liver leftover and started to look for some new recipe. I found it in one of my favourite books and it looked very similar to the dish that my mom used to make when I was a child. So I gave it a try and me and my hubby enjoyed it a lot! Sadly but my kids didn’t understand us and didn’t eat. But anyway now this recipe is one of my favourites, because it’s so quick that for making and eating it I spend less than an hour.

Very delicious chicken. We prepared if a few times but it was very hard to take photos. The first time I overcooked the chicken but glaze was thicker. The second time I cooked less but the glaze was thin. So I think the best would be to cook chicken (not over cook), then take it out and cook liquid to prepare good glaze 🙂 Anyway, both times it was delicious supper for my family.

Chicken and rice salads with curry

I decided to prepare something new for our already boring quick menu. This dish is very quick, if you do like me – boil chicken a day before. My hubby commended. I asked him maybe the dish is so good because almost all the week we ate what we had on hand? But he assured that no and ate almost everything, leaving just a few bites for my next day lunch… You can enjoy these salads and cold, and warm.
