It’s a very quick dessert or snack. It’s my style 🙂 And the ingredients are only a few. But it’s a pity that in Lithuania we can’t find puffed rice, only in Poland…

Puffed rice with sunflower seeds and honey

Time needed:
Yields: 10 servings
Calories: 99 kcal / serving

Ingredients:

  • 25 g butter
  • 70 g honey
  • 70 g sunflower seeds
  • 50 g puffed rice

Directions:

  • Turn the oven to 150°C.
  • Melt the butter in a small saucepan.
  • Add the honey and stir. Let it bubble for 2-3 minutes and then take off the heat.
  • Roast the sunflower seeds in a hot, dry pan until they turn brownish-golden.
  • Mix puffed rice, sunflower seeds and honey mixture.
  • Line baking dish (I used 30x20cm) with baking paper. Pour puffed rice mixture and press with the spoon for better rice sticking.
  • Bake about 10 minutes or until the top will be slightly brown.
  • Let cool completely and only then you can cut them.
  • Enjoy!

Granola with honey

Granola that smells honey, but very crunchy and addictive like sunflowers. Everytime I prepare it, half of it I eat alone – without milk, just like crunchy cookies. Even my hubby loved it, just honey is not recommended for him, so next time I will prepare it with golden syrup instead of honey. And I like this granola without any mix-ins!

Let’s start this new year eating healty! Especially when it does not requires a lot of effort, it should not be difficult to prepare it. I really wanted to try raw buckwheat, and when I bought them for long time I could not decided what to do with them. When accedentally I discovered this recipe, quickly it was prepared for breakfast. And yes, at first you will be tired of chewing it, but I think it’s good because you will have to make time for eating. You can not put quickly this porridge in your stomach and go, you will have to sit, chew and think about your life – it takes time. Fruits can chosen according to your taste, but I like the kiwi and ginger combination and ripe bananas provide enough sweetness, so for me it has enough sweetness even without honey or agave syrup. But you can always choose your favourite fruits and adjust sweetness by your taste buds.

At first I was very sceptical about this recipe, because I thought that butterscotch and dried fruits won’t fit together. I was wrong and I am very happy about that 🙂 Dried fruits are perfect here, the dessert is not too sweet because of them.

I use less and less ingredients to do something sweet 🙂 Now I used only three ingredients. Next time I’ll try to use breakfast crisp balls. Mars bars is very good when you don’t want to waste time unfolding butter scotches. And it gives the taste between butterscotch and chocolate. But we likes this sweet a lot – disappeared in minutes.

Oat cookies with chocolate and puffed rice

After a long term there comes the cookies which my daughter liked very very much. Other cookies for her a too dry, she likes only the ones with dried friuts or nuts, or seeds. My son is a “white flour boy”, he can eat all cookies and these cookies were not different 🙂 . Puffed rice gives these crunchy cookies some softness. Chocolate like always gives for the cookies some charminess and while cookies are warm it is still melted and that’s the way my daughter likes 🙂
